Ingredients
Method
Techniques
  • ½ cup ground-up walnuts
  • 1 cup granulated sugar
  • ¾ cup water
  • 1 whole cinnamon stick
Syrup: in a saucepan combine the sugar, water and cinnamon stick; cook over medium heat until it boils and the sugar dissolves.
  • ¼ cup honey
  • 1 tsp pure vanilla extract
  • 1 lb number four filo
Off the heat whisk in the honey and vanilla extract; cool completely.
Thaw the filo in the fridge overnight, then about an hour on the counter.
Choosing and thawing the filo
  • 113 g unsalted butter
Take one sheet at a time; drizzle lightly with melted butter and brush gently. Leave stuck-together sheets as a double layer.
Buttering the sheets
  • Nutella
Warm the Nutella in the microwave or over warm water so it thins; drizzle here and there over the sheet and spread gently with an offset spatula (or pipe it).
Warming and spreading the Nutella
Sprinkle a very thin layer of ground walnuts; fold the sheet into thirds to a strip about three and a half to four inches wide.
  • 1 tsp Nutella
Put a teaspoon of Nutella at the bottom and fold up into a triangle; repeat until the filo runs out.
Place on parchment-lined baking trays; freeze any to bake later.
Brush the tops with the remaining butter; bake at 350F 20 to 25 minutes until golden and crisp.
Pour syrup over as soon as they come out; cool 15 to 20 minutes to room temperature.
