Techniques
  • 120 g all-purpose flour
  • ½ tsp baking soda
  • ½ tsp salt
Whisk together the flour, baking soda, salt and cinnamon; set aside.
  • ½ tsp ground cinnamon
  • ½ cup unsalted butter
  • ⅓ cup granulated sugar
  • brown sugar
Cream the butter with the granulated sugar first, then add the brown sugar, breaking up any clumps by hand; beat until light and fluffy, scraping the bowl.
  • 1 whole large egg
  • 1½ tsp vanilla extract
Add the room-temperature egg and the vanilla and mix, scraping the bowl down.

Cover and chill the dough at least an hour.
Preheat the oven to 375F. Scoop heaping tablespoon-sized pieces, roll them, and place about two inches apart.
Bake at 375 for 8 to 10 minutes until the edges are golden brown; the centers set after leaving the oven.
