Techniques
- 500 g all-purpose flour
- 2 tsp cinnamon
- ¼ tsp salt
- 2 tsp baking powder
- 2 whole orange zest
Whisk the flour, cinnamon, salt, baking powder and orange zest together.
- 200 g granulated sugar
- 1 cup orange juice
- 2 tsp pure vanilla extract
- ½ tsp baking soda
- 1 cup light olive oil
- ½ cup tahini
Mix the sugar, orange juice, vanilla, baking soda, light olive oil and tahini together until the sugar has dissolved.
Add the flour mixture in two or three batches, switching to a spatula when it gets too thick for the whisk.
Cover with a clean kitchen towel and set aside 15 to 20 minutes until the dough sets enough to shape.
- sesame seeds
Take a tablespoon or walnut sized amount, roll it into a ball and then into a rope four or five inches long, reworking it if it falls apart.
Roll the rope in sesame seeds if wanted, then form it directly on the tray into a circle or an S; formed on a board they fall apart.
Bake at 350F for about 20 to 25 minutes, rotating if more than two trays are in; 20 minutes for softer, longer for crisper.
Cool on the trays to keep the bottoms slightly soft, or move them to a cooling rack straight away for crisper cookies.
