Techniques
  • 30 ml extra virgin olive oil
Heat a large fry pan over medium heat with the extra virgin olive oil.
  • 1 whole small onion
  • 8 cloves garlic
Finely chop the onion and roughly chop the garlic.
Add the onion and garlic, coat them in the oil and mix continuously 3 to 4 minutes until the onion is translucent and the garlic fragrant.
Add the dried oregano and mix so it coats the onion and garlic.
  • 1 g dried oregano
  • 840 ml vegetable broth
  • sea salt
  • freshly cracked black pepper
Add the vegetable broth, season with sea salt and black pepper, raise to high heat and bring to a boil.
  • 225 g penne pasta
Add the pasta and stir every two minutes or so as it cooks.
  • 120 g light cream cheese
  • 60 g cheese
  • 15 g chopped fresh parsley
  • 2 g dried parsley
  • sea salt
  • freshly cracked black pepper
Mix the room temperature cream cheese, the grated cheese and the chopped parsley in a bowl with sea salt and black pepper, pushing down with a spoon until well mixed.
After 9 to 10 minutes, cover and simmer on low medium 2 to 4 minutes more until the pasta is al dente.
Turn off the heat, add the cream cheese mixture and mix to a creamy sauce; loosen with more broth if it is too thick.
Serve straight out of the pan or in serving dishes.
