Techniques
  • 60 ml extra virgin olive oil
Heat a large fry pan over medium heat and add a quarter cup of extra virgin olive oil.
  • 2 whole yellow onions
  • 4 cloves garlic
Thinly slice two medium yellow onions and roughly chop four cloves of garlic.
Add the sliced onions to the hot pan, coat them in the oil and stir every one to two minutes so they saute evenly.
  • 400 g canned white beans
Drain one can of white beans into a colander and rinse them under water.
After about 10 minutes, once the onions are translucent, add the chopped garlic, dried oregano, crushed red pepper, sea salt and black pepper.
  • 1 g dried oregano
  • ¼ tsp crushed red pepper
  • sea salt
  • freshly cracked black pepper
Mix continuously for about a minute until the garlic is fragrant.
  • 1 l vegetable broth
  • 190 g rice
Add the rinsed white beans and one liter of vegetable broth, turn to a high heat and mix gently.
Beans and broth
Once the broth comes to a boil, add one cup of rice and mix so everything is evenly distributed.
Lower to a low medium heat and simmer about 18 minutes until the rice is just cooked, mixing every two to three minutes to release the starch.
  • 30 g grated cheese
  • 10 ml fresh lemon juice
Turn off the heat, add the grated cheese and the lemon juice and give it one final mix.
Cheese, lemon and chives to finish
  • chopped chives
Serve straight from the pan or in dishes and top with chopped chives.
