Method
Techniques
- 1 lb macaroni pasta
- 3 tbsp butter
- ½ whole diced onion
- 4 cloves minced garlic cloves
- 3 tbsp flour
- 2 cup milk
- 1 can evaporated milk
- 1 tsp paprika
- 1 tsp black pepper
- 4 whole rajas
- water
- chicken bouillon
- salt
Fill a large pot halfway with water, add chicken bouillon and salt, and bring to a boil over medium-high heat.
Add the macaroni and cook al dente according to the package, stirring occasionally. Drain and set aside.
In the same pot over medium heat, melt the butter, add the diced onion and minced garlic and saute 2 minutes.
Slowly add the milk, whisking as it pours; add the evaporated milk, paprika, salt and black pepper and whisk until the flour dissolves and the sauce thickens, about 5 minutes. Taste and adjust the salt.
- freshly grated cheese
Mix in the rajas, then add the freshly grated cheese little by little and let it melt completely.
Mix in the cooked pasta and let it sit a few minutes before serving.
Variation: for heat, add a jalapeño or serrano chile when sauteing the onion.
