Techniques
  • 2–4 tbsp olive oil
  • 1½ tsp salt
  • ¼ tsp crushed red pepper flakes
  • ¼ cup finely chopped parsley
  • 1 whole onion
Cook a finely chopped onion in olive oil over medium heat about eight minutes until soft and golden.
  • 4 cloves garlic cloves
Add four grated garlic cloves and warm through until fragrant.
  • 2 lb ground beef
  • freshly cracked black pepper
  • ¼ tsp cinnamon
Add the ground beef, break it up with a spatula and season with salt, black pepper and a quarter teaspoon of cinnamon; cook a few minutes until no longer pink.
  • 1–2 whole bay leaves
  • 1 can tomato sauce
Add one or two bay leaves, crushed red pepper flakes and the can of tomato sauce; with crushed tomatoes add about a teaspoon of honey or a little sugar to offset the acid.
Tomato, bay and balancing acid
  • water
Rinse the can with a little water into the pot, mix and bring to a boil; reduce to medium or medium-low, cover and cook about 15 minutes until thick.
  • 1 lb uncooked orzo pasta
  • 6 cup water
  • 1½ tsp salt
Add a pound of uncooked orzo, six cups of water or broth and about one and a half teaspoons of salt; bring to a boil.
Cooking the orzo in the sauce
Cook lightly covered about 18 minutes to al dente, stirring every few minutes so the orzo does not stick and burn.
Let it sit a few minutes to absorb the liquid; if serving an hour or two later, thin with more broth or water.
Absorbing the liquid and finishing
Taste for seasoning and finish with finely chopped parsley.
