Techniques
  • 1 whole orange
Wash the orange, put it on the chopping board and cut off both ends to expose the flesh, as flat as possible.
Following the shape of the fruit, cut away the skin with a little of the flesh, using the rim as a guide, until no white remains. Use a sharp, thin-bladed knife.
Cut just inside the white membrane lines on each side of every segment so the skinless quarters fall out; fold the membranes back like the pages of a book as you go. Discard untidy pieces.
Cutting the segments free of the membranes
Squeeze the juice left in the membranes and discard them.
Spoon the quarters into a nice glass such as a coffee glass, hiding any untidy ones underneath.
Serving the supremes as a dessert
  • mint
Finish with a little mint.
