Techniques
- 26 whole Oreos
- ½ cup melted butter
Process the 26 Oreos to crumbs, pulse in the melted butter and mix once more by hand to a wet sandy mixture that clumps.
Making the Oreo crumb crust
Tip into a springform pan and tamp down with a flat bottomed glass, pressing a wall up the sides and fixing any gaps last.
- 24 whole Oreos
Chop 12 Oreos into quarters or thirds and finely chop 12 more.
- 3 package cream cheese
- ½ tsp salt
- 200 g granulated sugar
- 3 tbsp flour
Beat the soft cream cheese with the salt and sugar on medium, sifting in the flour as it runs, until creamy and homogenous; scrape the bowl.
- ½ cup sour cream
- 1 tbsp vanilla
- 3 whole eggs
Mix in the sour cream and the vanilla.
Sour cream, vanilla and the eggs
- 1 whole egg yolk
On medium low add the eggs one at a time, waiting for each to incorporate, then the egg yolk.
Fold in the finely chopped Oreos until almost incorporated; do not overmix.
Layer a third of the batter in the pan, half the chopped Oreos, another third of batter, the rest of the Oreos, then the remaining batter; shimmy to level and surface the air bubbles.
Set the pan on a rimmed baking sheet, bake at 350 for 10 minutes, then reduce to 300 and bake a further 40 to 50 minutes until there is a slight wobble in the centre.
For insurance against cracking, put a dish of an inch of hot water on the bottom shelf of the oven.
- 1 cup white chocolate
- 20 g semi-sweet chocolate
- ⅓ cup heavy cream
Chop the white chocolate small into a microwave safe bowl, add the heavy cream and microwave in bursts, stirring between, until silky; it took 30 seconds then 20.
Why it cracked
- 1 tbsp cream
Finely chop the dark chocolate, add a tablespoon of cream and microwave in 20 second bursts, stirring between.
The dark chocolate ganache
Run a knife or offset spatula round to break the seal and release the ring, then slide the cake onto a stand.
Pouring and marbling the ganache
Pour the white ganache into a pool in the centre and smooth it towards the edge; drop blobs of the dark chocolate on it and swirl with a skewer to marble.
- 240 ml heavy cream
- ¼ cup powdered sugar
- 1 tsp vanilla
Whip the cold heavy cream with the powdered sugar and vanilla, starting on low and finishing by hand at very soft peaks.
- Oreos
Pipe a rope pattern round the top with a star tip on a turntable and set Oreo halves along the border every two swirls.
