Techniques
- 4 tbsp honey
- 2 tbsp light soy sauce
- 1 tbsp Chinese cooking wine
- 1 tbsp garlic chili sauce
- 1 tbsp oyster sauce
- 1 tbsp hoisin sauce
- 2 tsp dark soy sauce
- 1 tsp red yeast powder
- 1 piece Chinese soy bean curd
- five spice
Mix honey, light soy sauce, Chinese cooking wine, garlic chili sauce, oyster sauce, hoisin sauce, dark soy sauce, the soy bean curd, red yeast powder and a pinch of five spice; blend so the bean curd combines.
Trim some, not all, of the fat from the pork belly; cut it 2 cm thick and in half to fit the oven.
Choosing and cutting the pork
- 1 lb skinless pork belly
Put the pork in a bag with part of the sauce, press out the air in water, massage, and refrigerate overnight.
Bake in a baking pan in the middle of an oven preheated to 390 degrees for 8-10 minutes, turn, and bake the other side 8-10 minutes.
Brush both sides with the sauce left in the bag and bake 10 minutes more; repeat brushing and baking 3 to 5 times, melting the fat without burning.
