Palak tofu
Pat the tofu block dry and slice into bite-sized cubes.
  • 1 whole tomato
  • 350 g extra firm tofu
  • 2 tbsp avocado oil
Heat two tablespoons of avocado oil in a saute pan over medium heat.
  • 1 tsp cumin seeds
  • 1 tsp fennel seeds
  • 1 tsp salt
Fry the cumin and fennel seeds about 45 seconds until aromatic.
Add the onion, ginger, garlic, chili pepper and one teaspoon of salt and saute five to seven minutes to sweat the onions.
  • 1 tsp turmeric
  • 2 tsp garam masala
  • 1 tsp ground coriander
Stir in the turmeric, garam masala and ground coriander.
Add the tomato and saute three to four minutes; its juices deglaze the pan.
  • 300 g fresh spinach
Wilt in the spinach in two to three batches.
Wilting the spinach
  • 1 cup coconut cream
Stir in one cup of coconut cream.
Transfer to a blender and blend on medium about 20 seconds; do not blend high or it turns to soup.
  • 1 tsp avocado oil
Heat one teaspoon of avocado oil in the pan over medium and sear the tofu cubes a few minutes for colour.
Take the pan off the heat and let it cool a minute, then pour in the creamed spinach and stir. Cooling first prevents splattering against the hot oil.
Plate generously. Serve with basmati rice or naan.
