- ¼ tsp crushed red pepper flakes
- 2 tbsp parsley
- 1 block feta cheese
Pat the block of feta dry and press both sides into flour spread on a plate for a light coating.

Heat the pan over medium heat with olive oil; fry the feta until golden, 2 to 3 minutes per side, and transfer to a plate.

Add the tomatoes, season with a little salt and cook about 7 minutes, stirring occasionally, until they burst and soften without mashing.

- 2 cloves garlic cloves
- green olives and calamata olives
- 1 tsp dried oregano
Add the grated garlic and warm a few seconds until fragrant; add the pitted olives, about a teaspoon of dried oregano and red pepper flakes, and cook 2 to 3 minutes more.
- 1 whole lemon zest
- 1 whole lemon juice
Turn off the heat; add the zest and juice of a lemon and mix. Set the feta back in the centre and let it warm through off the heat a few minutes to soften.
