Techniques
  • 2 cup water
  • water
  • 1 whole white onion
  • 3 pieces garlic
Bring a pot of water to a boil for the pasta; finely chop one white onion and three cloves of garlic.
  • 1 tsp avocado oil
  • ½ tsp salt
  • fresh cracked pepper
  • ½ cup cashews
Heat a saute pan over medium with about a teaspoon of avocado oil; saute the onion and garlic 3 to 4 minutes until soft, adding about half a teaspoon of salt and pepper.
Stir in half a cup of cashews, add the water, stir and bring to a boil until the cashews soften.
  • ¼ lb linguine
Boil about a quarter pound of linguine to package instructions, about nine minutes.
  • ¼ cup ham parts
Transfer the cashew mixture to a blender with about a quarter cup of hemp hearts (optional) and blend on high until completely liquefied. Refrigerate the extra sauce and use within the week.
  • ¼ cup plant-based parmesan
Return the saute pan to medium heat, pour in half the sauce, add the cooked pasta and grate in about a quarter cup of plant-based parmesan; stir.
  • ¼ cup pasta water
Add about a quarter cup of pasta water, turn off the heat and stir; thin it more than seems needed because it thickens as it sits.
  • fresh parsley
Plate, grate over more parmesan, and finish with chopped parsley and cracked pepper.
