Ingredients
Method
Techniques
  • 1 cup sugar
  • 0.125 tsp salt
  • 2 tbsp vanilla paste
  • 1 cup cream
  • 2 cup half and half
  • ¼ cup sugar
  • ¼ cup water
  • 15 g pectin
Use a two quart saucier for the dairy and a one quart for the pectin.
Put the sugar, salt, vanilla paste, cream and half and half in the larger pan, rinsing the thick cream out with some of the half and half.
Whisk over medium to medium high heat to about 185F, to change the protein structures, open up and disperse the paste, and thoroughly dissolve the sugar; kill the heat and put the lid on.
In the small pan bring the sugar, water and liquid pectin to a boil over medium-high and boil a solid minute so the pectin strands lightly link into a light net.
Take the pectin off the heat and whisk it into the dairy.
Set the bowl into another bowl of ice and water and whisk, turning the bowl, until it comes to room temperature.
Rest the base in the refrigerator 12 to 18 hours, overnight, so the pectin sets its network and the milk fat crystallises; it churns faster and thicker.
Blend the aged base briefly with an immersion blender to break up any globs and start it as a foam with a little air back in.
Start the machine before the mixture goes in or it crystallises on the drum; pour straight down and churn about 22 to 24 minutes with a towel on top.
Add any hunks or chunks at about 18 minutes in, no earlier or they sink, no later or they will not integrate.
Pack into pint containers.
Packing, hardening and serving
Harden in the freezer a minimum of three hours until scoopable.
Let it stand at room temperature a few minutes before scooping and serve in a chilled stemmed goblet, with nothing on it.
