  • 2 tbsp all purpose flour
  • cocoa beans
First attempt, following the game: mix two tablespoons of all purpose flour with a handful of cocoa beans in a bowl.
Put the first attempt dough on a parchment-lined sheet tray and bake at around 350 for about 15 minutes until golden brown, then rest about five minutes to cool.
For the plain dough, combine the flour, kosher salt and baking powder in a bowl, mix and set aside.
  • 1100 g all-purpose flour
  • 1 tbsp kosher salt
  • 1½ tsp baking powder
  • 300 g unsalted butter
  • 300 g vegetable shortening
  • 450 g white sugar
  • 250 g dark brown sugar
In a large stand mixer with the paddle, cream the softened butter, shortening, white sugar and dark brown sugar on high until fluffy, about four to five minutes.
  • 4 whole eggs
  • 2 tsp vanilla extract
Add the eggs one at a time, scraping the bowl between each, and the vanilla extract at the end.
Add the dry ingredients all at once and mix in.
Tip the dough onto a large surface lined with saran wrap, press out any unincorporated pockets and seal the sides, then push it to the edges with a rolling pin into one large, smooth, relatively flat rectangular sheet.
Pressing the dough into a sheet
Refrigerate the sheet about two hours.
  • 225 g all-purpose flour
  • 50 g cocoa powder
  • ½ tsp kosher salt
  • ½ tsp baking powder
For the chocolate dough, combine the flour, cocoa powder, kosher salt and baking powder in a bowl.
  • 75 g unsalted butter
  • 75 g shortening
  • 125 g white sugar
  • 50 g brown sugar
  • 1 whole egg
  • ½ tsp vanilla extract
Cream the butter, shortening, white sugar and brown sugar until fluffy, add one egg and the vanilla extract, scraping down, then add the dry ingredients and mix about a minute without overworking.
Roll the chocolate dough onto saran wrap, flatten, wrap and roll into a thin flat sheet and chill it with the other dough.
Once both doughs are firm and cold, reform the plain dough into a rectangle about three quarters of an inch thick and the chocolate dough about half an inch thick, using a ruler and bench scrapers, then set them in the freezer.
With the doughs semi-frozen and extra firm, mark squares roughly one and a half inches across and cut them out with a sharp knife.
  • dark chocolate
  • milk chocolate
On a parchment-lined pizza stone, lay the plain squares down as a skeleton in the shape of the cookie, fill the holes with the chocolate dough squares and press a square of dark or milk chocolate into each one.
Assembling the cookie pixel by pixel
Bake at 325 for almost an hour, until golden brown on all sides.
  • Maldon salt
Push a few extra chocolate squares into the hot cookie, then sprinkle Maldon salt over the top.
Extra chocolate and tasting
Cut into squares along the pixel marks to serve.
