Add the pomegranate flavoring and citric acid to the hot sugar at about 310 degrees.
Flavoring the hot sugar
  • red, yellow, blue and white coloring
Pour the sugar into four equal pools and mix red, yellow, blue and white coloring into them, letting the steam drive off water; avoid any water or humid conditions.
Coloring four pools of sugar
As the edges cool, peel the sugar up into the center of each pool to even the temperature, wearing gloves; it is still in the mid-200s.
Folding in the edges and handling heat
Pull the colors only enough to mix them, keeping them transparent; pulling more works in air and turns the color opaque and lighter.
Pulling for transparency or opacity
Divide and mix the primaries to make six colors: red and yellow for orange, red and blue for purple, blue and yellow for green.
Mixing six colors from three
Work on a griddle used as a heat plate to keep the sugar in a clay-like state: too hot it melts, too cold it gets brittle.
Keeping the sugar workable
Shape each color into a long triangle, edged with a little white, tidying the edges with a spatula; take them off the heat plate if they get too warm and lose shape.
Press the six triangles together into a round pinwheel cylinder while hot; if they cool, a little water from a damp cloth acts as glue.
Stretch the cylinder into thin rods and keep rolling them so they do not go flat, about 20 minutes, until cool enough to crack.
Stretching and rolling the rods
Break the rods against a hard surface into bite-size pieces about half an inch long; roll them around to remove sharp edges.
