Method
Techniques
  • 5 stalk sugar cane
  • ½ cup dried plums
  • ½ cup dried prunes
  • 1 lb tejocotes
  • 1 lb guayabas
  • 3 whole membrillos (quince)
  • apples
  • pears
Cut the fruit into small bite-sized pieces; cut the quince into small cubes and soak in water so it does not brown. Halve the guavas; leave the tejocotes whole.
  • 5 quart water
Add five quarts of water to a pot over medium-high heat with the cloves and cinnamon sticks; bring to a boil.
  • 6 whole whole cloves
  • 2 sticks cinnamon sticks
  • 3 whole piloncillos
Once boiling, add the piloncillos and let them dissolve, about six minutes.
  • 2 whole tamarindos
  • 1 cup hibiscus flower
Add the cleaned tamarinds and the hibiscus flowers; give it five minutes.
Press down on the tamarind to extract the flavor, then carefully strain the mixture back into the pot.
Taste for sugar and add more if wanted.
  • 2 whole oranges
Add the oranges and the peeled sugar cane; cook five minutes.
Adding the fruit
Add the optional dried plums and prunes, then the tejocotes, guavas, apples, pears and quince; mix and cook 10 minutes so the fruit does not get mushy.
  • 1 stick cinnamon stick
Serve a little of every fruit in each cup with the punch, garnished with a cinnamon stick.
