Techniques
  • 4 whole bone-in pork chops
  • 1 whole onions
  • salt
  • pepper
Season both sides of the pork chops with salt and pepper and dust with flour; let sit a few minutes.
  • flour
  • olive oil
Sear in a large hot skillet with olive oil until golden brown, 3 to 4 minutes; flip and cook 1 more minute, not all the way through or they will be tough.
Add onions (or garlic or shallots) and let sizzle a few minutes.
Onions and tearing the cherry peppers
  • whole cherry peppers
Tear the whole cherry peppers apart.
  • ½ cup white wine
  • 1 cup chicken stock
Once the onions have cooked down, deglaze with about half a cup of white wine and let it go a minute; add about a cup of chicken stock.
Add the cherry peppers.
Simmer 7 to 8 minutes until the sauce is reduced, without overcooking or the chops will be dry.
  • parsley
Finish with a little parsley.
