Techniques
  • 300 g daikon radish
  • 20 g oil
  • 8 g white part of the scallions
  • 8 g diced green part of the scallion
  • 6 g cilantro
  • 300 g ground meat
Grind the pork in a food processor if ground meat is not available.
  • 1½ tbsp soy sauce
  • 1 tbsp oyster sauce
  • 1 tbsp Chinese cooking wine
  • 1½ tsp ground white pepper
  • 1½ tsp garlic powder
  • 1 tbsp cornstarch
Season the pork with soy sauce, oyster sauce, cooking wine, white pepper, garlic powder and cornstarch; stir in one direction for a few minutes to develop the texture. Set aside.
Julienne the daikon thinly, by knife or vegetable slicer.
  • 1½ tbsp minced garlic
  • 1 tbsp minced ginger
Preheat a clay pot until hot; add oil, the white part of the scallions, the minced garlic and ginger.
Aromatics from the freezer
Stir over medium heat 2 to 3 minutes, until the frozen garlic and ginger defrost.
  • 4 cup chicken stock
Pour in 4 cups of stock and bring to a light simmer, not a full boil; then turn to low.
Squeeze a handful of meat so a ball forms between thumb and forefinger; scoop it off with a spoon dipped in the stock each time and drop it in. Never add meatballs to boiling liquid or they break.
Add the daikon, turn the heat up, bring to a boil and cook 3 minutes.
  • 1 tsp salt
Season with salt to taste and garnish with the green scallion and cilantro.
