Techniques
- 1 lb baking potato
- salted boiling water
Quarter the potato and boil in salted water until tender.
- 57 g sifted flour
- 57 g softened butter
- 57 g Swiss cheese
- ¾ whole egg
Whisk the egg; for the halved recipe use about three quarters of a small egg.
Beat the flour into the mashed potato, then the softened butter a little at a time, with a wooden spoon.
- 0.0625 tsp white pepper
- cayenne pepper
- nutmeg
- salt
- butter
Beat in the egg, grate in the Swiss cheese, add the white pepper, a pinch each of cayenne and nutmeg, and salt.
Pipe through a quarter-inch fluted nozzle into sticks two and a half inches long, half an inch apart, onto a baking mat or lightly buttered sheet.
Bake at 425F until light brown, about 10 to 15 minutes (book says about 15), switching the trays top and bottom halfway.
