Techniques
  • 1 whole onion
  • 3–4 whole scallions
  • 8–10 whole fresh leeks
Finely chop the onion; thinly slice the scallions down to the white parts.
Prasorizo, a one-pot leek pilaf
Cut off the dark and lighter green parts of the leeks, halve them, and thinly slice into half moons.
Swish the sliced leeks in a big bowl of cold water so the dirt sinks, lift them out and spin dry in a salad spinner or shake in a strainer; repeat if the water is very dirty.
Washing the grit out of the leeks
  • ¼ cup olive oil
In a pot over medium heat cook the onion in the olive oil until soft and golden, about 7 to 8 minutes.
  • 3 cloves garlic
  • salt
Add the grated garlic until fragrant, then the leeks and scallions with a pinch of salt; cook 5 to 7 minutes until soft.
  • 2 cup rice
Rinse the rice in a strainer with cold water and drain.
  • 5 cup water, vegetable broth, or chicken broth
  • 2 tsp salt
  • black pepper
  • ½ whole lemon
Add the rice, the water or broth, salt, black pepper and lemon juice. Bring to a boil, reduce to medium and simmer 15 minutes, loosely covered.
  • 1 tsp dried dill
  • lemon wedges
  • Greek olive oil
Stir in the dill. Serve with lemon wedges and a drizzle of olive oil, with feta if wanted.

Serve straight away; reheat leftovers with more broth to thin.
