Techniques
  • butter
  • oil
  • 1 whole yellow onion
Start the long-sliced onion in butter and oil and cook 20 to 25 minutes until caramelized.
  • 10 oz steak
  • 2 oz bacon
Grind 10 oz of cold dry-aged steak with 2 oz of partly frozen bacon.
  • salt
  • pepper
  • 1½ oz sharp cheddar
Season with salt and pepper, add an ounce and a half of sharp cheddar and mix with gentle hands.
Mixing in the cheddar
Form loose six-ounce patties without packing them tight; no binder.
Forming loose patties
Remove the onions and use the same greased cast iron pan; season the patties outside with a little more salt and pepper.
Add a tiny bit more oil and sear the patties for color on both sides without moving them.
Finish the pan in a 300 oven, maybe 10 minutes, to about 160 degrees inside; let sit a moment to firm up.
Finishing in the oven
  • mayo
  • steak sauce
  • bun
Spread mayo and steak sauce on the bottom bun, add the patty, top with caramelized onions and the lid.
