Ingredients
Method
Techniques
  • 2 cup all-purpose flour
  • ¼ tsp salt
  • 2 tsp baking powder
  • 2 tsp baking soda
  • ground cinnamon
  • 1¼ tsp pumpkin pie spice
Sift the flour, then mix in the salt, baking powder, baking soda, ground cinnamon and pumpkin pie spice. A store-bought spice cake mix can replace this step.
  • non-stick cooking spray
Spray a 9 by 13 baking dish with non-stick spray and remove the excess. Preheat the oven to 350F.
Preparing the dish and oven
  • 4 whole eggs
  • 1 cup sugar
  • 1 tsp vanilla
Beat the eggs, sugar and vanilla on high speed for seven minutes.
  • 15 oz pumpkin puree
  • ¾ cup vegetable oil
Add the pumpkin puree, the vegetable oil and the flour mixture and mix on low for two minutes, scraping the edges partway and whisking another minute.
Fold everything together by hand to make sure it is well mixed.
Spread the batter evenly in the dish and bake 30 minutes, then check the centre.
Poke the warm cake all over with a toothpick or fork so it is completely covered with holes, then cool completely.
  • evaporated milk
  • sweetened condensed milk
  • 1 cup half and half
  • 1 tsp vanilla
  • pumpkin pie spice
Mix the evaporated milk, sweetened condensed milk and one cup of half and half with a teaspoon of vanilla and a little pumpkin pie spice.
Pour the milk over the cooled cake. For a less soaked cake pour half and keep the rest to pour at serving.
Mixing and pouring the three milks
Cover and refrigerate overnight, or at least four hours.
  • 3 cup heavy cream
  • ¼ cup sugar
  • 2 tsp vanilla
  • 2 tsp pumpkin pie spice
Whip the heavy cream with the sugar, vanilla and pumpkin pie spice to a whipped topping.
  • cinnamon
Pipe or spread the topping over the cake and sprinkle a little cinnamon over it.
