Techniques
- 1.1 kg boneless skinless chicken thighs
- 32 g ginger
- 35 g garlic
- 1 tbsp ghee
- 1 whole dried bay leaf
- 2 inch cinnamon stick
- 7 whole green cardamoms
- 7 whole cloves
- ½ tsp cumin seeds
- ½ tsp turmeric powder
- 2 tsp Kashmiri red chili powder
- 1 tbsp ground coriander
- ½ tsp kasuri methi
- 1 tsp garam masala powder
- ¼ cup plain unflavored yogurt
- ½ tsp turmeric powder
- ¼ tsp red chilli powder
- ½ tsp salt
- ½ tsp coarsely crushed black pepper
- 1 whole onion
Marinate the chicken with the yogurt, turmeric powder, Kashmiri red chilli powder, salt and coarsely crushed black pepper; mix well and marinate at least 30 minutes or overnight.
- 1 whole large tomato
Chop the onion, ginger, garlic and tomato as finely as possible; no blender is needed.
- 2 tbsp oil
Heat two tablespoons of oil and some ghee in a pan on medium-high heat.
Oil, ghee and whole spices
Lower the heat to low, then add the whole spices: bay leaf, cinnamon stick, green cardamoms, cloves and cumin seeds, so they do not burn.
- salt
Add the chopped ginger and garlic and stir a minute on medium heat, then add the onion with a sprinkle of salt and stir until well fried, when the oil separates at the sides of the pan.
Add the turmeric powder and stir two minutes, then the Kashmiri red chili powder.
Adding the spice powders
Add the chicken with all the marinade, mix, then add a tablespoon of ghee and the ground coriander.
Cooking the chicken until the water dries up
- 1 tbsp ghee
Stir from time to time on high heat until all the water from the chicken dries up and the oil comes to the surface.
Add the crushed kasuri methi and garam masala powder.
- 1½ cup hot water
- 2 whole whole green chilies
Cover on very low heat for 15 minutes, stirring now and then.
Discard the bay leaf, cinnamon stick and any cardamoms you find; add a generous amount of coriander leaves.
Finishing and serving
- coriander leaves
Serve with roti, naan or rice; it tastes better made the day before and refrigerated.
