Ingredients
Method
Techniques
  • 200 g green chilies
  • 100 g mild Sivri chilies
Slice the tops off the chilies, remove the cores and roughly chop them into large pieces.
Green chilli dressing
  • 60 g hot pale green chilies
  • 40 g bullet chilies
  • 5 cloves garlic
Process the chilies with five cloves of garlic in a blender or food processor until finely ground.
  • 60 ml lemon juice
  • 60 ml olive oil
  • ¼ tsp salt
Mix in 60 ml lemon juice and 60 ml olive oil, then a quarter teaspoon of salt, and season to taste; the sauce should stay slightly chunky and its flavour develops over the next few days.
  • 400 g cooked fava beans
Empty a 400 g can of cooked fava beans into a pot over medium-low heat and steam with the lid on about 10 minutes until tender.
  • 75 g prepared hummus
Lightly crush the fava beans with a potato masher to a half-mashed state and transfer to a bowl.
  • 1 tbsp tahini paste
  • 4–5 tbsp chilli seasoning
  • cooked chickpeas
Add 75 g prepared hummus, 1 tablespoon tahini paste, four to five heaped tablespoons of the chilli seasoning and a handful of cooked chickpeas, and mix.
  • ¼ tsp salt
Taste and adjust with more chilli sauce and a quarter teaspoon of salt, then plate with more chilli sauce and chickpeas on top.
