Ingredients
Method
Techniques
  • 25 g cocoa powder
  • 355 g flour
  • 70 g buttermilk
  • ¾ tsp vanilla
  • 405 g sugar
  • 375 g butter
  • 6 whole eggs
  • 2 tsp apple cider vinegar
  • 1 tsp baking soda
  • 240 g cream cheese
  • 150 g butter
Preheat the oven to 176C (348.8F).
  • 1 tsp salt
Sieve the cocoa powder with the flour and a teaspoon of salt.
Beat the sugar and butter until fluffy; add the eggs one at a time.
  • red food coloring
Fold in the dry ingredients slowly, alternating with the wet (buttermilk, vanilla, food coloring).
Add the apple cider vinegar and baking soda.
  • butter
  • flour
Grease the sides of the baking dish, dust with a little flour, line the bottom with parchment, and distribute the batter.
  • icing sugar
Bake 20 to 25 minutes, until a poked tester comes out clean.
For the frosting, sieve the icing sugar; beat the butter and cream cheese, then add the icing sugar a little at a time.
Spread frosting over the bottom layer, add the next layer, and repeat.
Assembling, and frosting that melts
If the frosting melts under the weight of the cake, chill the cake in the fridge and firm the frosting in the freezer before continuing.
Add the third layer, chill to firm, then frost the outside and refrigerate overnight to set.
Grate leftover cake over the top and transfer the cake to a clean plate.
