  • ¼ tsp ground black pepper
  • ½ tsp Kashmiri red chilli powder

Marinate at least half an hour, or overnight in the refrigerator; take it out of the fridge an hour before cooking.

  • 4 whole cloves
  • 1 whole cinnamon stick
Add the sliced onions and stir over medium heat until just golden at the edges; turn everything out into a bowl and cool.

  • 1 tbsp homemade ghee
  • 1 tsp ginger garlic paste
In the same pan over medium heat, heat a tablespoon of oil and a heaped tablespoon of ghee; add ginger garlic paste and stir.

  • 1 tsp ground coriander, dhania powder
  • ½ tsp ground cumin, jeera powder
  • ½ tsp garam masala powder
  • 1 tsp sugar
Add the marinated chicken, Kashmiri chili powder, ground coriander, cumin, garam masala and optional sugar.

  • salt
  • ½ cup thick coconut milk

Cover on low heat 15 minutes; taste and adjust the seasoning.

  • ½ tsp kasuri methi, dried fenugreek leaves
  • 1 tbsp chopped coriander leaves
  • whole green chillies
Add more Kashmiri chili powder if needed, kasuri methi, chopped coriander leaves and a few whole green chillies; add cream now if using it.
  • 1 tsp ghee
Add a teaspoon of ghee, cover on low heat 5 more minutes.
  • coconut milk
  • chili oil
  • chopped chilies
Finish with more coriander leaves; garnish with a drizzle of coconut milk, chili oil and chopped chilies. Serve with naan, roti, paratha, pulao, biryani or rice.
