  • 2 cup whole wheat flour
  • salt
  • 1 tsp oil
  • water
Make a dough of whole wheat flour, a little salt, a teaspoon of oil and water; roll out the rotis.
The dough, briefly
Tawa method: heat the tawa on medium until quite hot and place a rolled roti on it.
The tawa method
When the color changes and bubbles form, flip; keep flipping from time to time over medium-low heat.
When it starts to puff, press gently on that spot with the back of a spatula to help it puff; flip and cook the other side, repeating until done to taste. Overcooking makes it tough.
  • extra virgin olive oil
Spread ghee, butter or extra virgin olive oil on top to keep it soft.
Nudging it to puff with a spatula
Roti grill method: cook the roti on the tawa over medium heat, flipping a few times on both sides, without waiting for it to puff.
Tools that sit above the coil
Transfer to a roti grill set over a coil on maximum heat, not touching the coil, and let it puff up.
