Techniques
  • 2 tbsp extra virgin olive oil
  • 2 cloves garlic cloves
Stir a couple tablespoons of extra virgin olive oil into a couple of crushed or finely minced garlic cloves; leave on the counter about an hour.
  • 1 parts plain yogurt
  • 2 parts sour cream
Stir one part plain yogurt with two parts sour cream for the dressing.
The sour cream and yogurt dressing
  • ½ whole sweet onion
  • tomatoes
Halve the sweet onion lengthwise with the fibres, then shave it very thinly across; toss it into the dressing immediately so it does not oxidise and turn stronger.
Trim rough patches from the tomatoes and slice about an eighth of an inch thick -- thinner than a classic Russian tomato salad, for bruschetta.
Add about twice as much tomato as onion to the bowl and mix without draining the juices; the juices become half the dressing.
  • freshly ground black pepper
  • cayenne pepper
  • salt
Season aggressively with black pepper, cayenne and two big pinches of salt; cover in plastic and refrigerate.
  • 4 slices Italian or French bread
Grill four thick slices of fresh bread over white, ashy coals, rotating and flipping, until well browned and charred in spots, keeping a little chew in the centre; no oil before grilling.
While warm, drench the bread with the garlic oil.

  • chives
Top with the salad using a slotted spoon, drip on more dressing if wanted, and finish with snipped chives.
Variation: with non-sweet onions, soak them in water then rinse and dry, blanch 10 seconds in boiling water, or saute a minute to soften the raw edge.
Variation: for a standalone salad, cut the tomatoes in larger chunks.
