- 1 whole serrano chili
- 1 cloves garlic
Stem the serrano, cut in pieces and chop finely in a food processor with a clove of garlic.
- 1 lb tomatoes
- cilantro
Add half the tomatoes, quartered, and a handful of cilantro; pulse seven or eight times. Tip into a bowl as the flavour base.
- 1 tbsp fresh squeezed lime juice
- 1 tsp salt
Season with fresh lime juice, about a tablespoon, and about a teaspoon of salt; season highly. Stir.
Variation: sear cubes of chicken breast, steak or scallops in a skillet, spoon in some of the salsa and stir until cooked.
