Techniques
  • salt
  • freshly ground black pepper
  • freshly ground white pepper
  • cayenne
  • garlic powder
  • Dijon mustard
  • 2 tbsp white distilled vinegar
  • 1 slab St. Louis style pork ribs
Mix the rub: salt, black pepper, white pepper, cayenne and a little garlic powder. Stir a little Dijon into a couple tablespoons of white vinegar.
Salt and pepper rub, mustard and vinegar
Lay the ribs bone side up on a foil-lined baking sheet; make shallow slashes and pierce all over with the knife tip.
Brush on about half the mustard mixture and sprinkle on about 40% of the rub; flip and repeat on the meaty side, holding back a teaspoon or two of rub.
Refrigerate uncovered about four hours or overnight.
Roast in the centre of a 300 degree oven about three hours until tender; halfway, at about an hour and a half, baste with the rendered fat.
  • All-American barbecue sauce
Test that a knife tip slides in with almost no pressure; rest 15 minutes, basting again, then slice and serve with barbecue sauce.
