Pull off any wilting outer leaf, halve the cabbage and chop it into pieces, said as '3 1/4-ish pieces' (as transcribed); they need not be exact.
- 12 oz green cabbage
- 2 tsp kosher salt
Salt heavily with kosher salt, half a teaspoon per three ounces, tossing and squeezing to bruise the cabbage until it looks bruised and the salt dissolves into the exuded moisture.
Let sit 15 minutes for the salt to draw water out.
- water
Cover with water and swirl two or three times to remove the excess salt.
Rinsing and dressing the cabbage
- 1 clove garlic
- 1–2 tsp sesame oil
- sugar
Dress with minced garlic, sesame oil and a pinch of sugar and toss.
