Duck eggs and cleaning the shells
  • ½ tsp salt
Put about half a teaspoon of salt in each shell, covering it evenly.
Curing the yolk in salt overnight
Gently put a yolk back into each shell (by hand, since duck yolks are harder to separate) and cover completely with another layer of salt.
  • salt
  • 0.125 tsp high level of alcohol
Add about an eighth teaspoon of high-proof alcohol to each yolk to help the smell. Cover and leave in the fridge overnight, or a few more days for better flavour.
  • high alcohol level wine
Next day, when firm and translucent, wash off the excess salt and dip in high-proof wine for a few seconds to kill bacteria.

  • vegetable oil
Store in a jar full of vegetable oil in the fridge; keeps 2 and a half weeks.
