Techniques
  • ½ cup split yellow pigeon peas
  • 1 tsp turmeric powder
  • 2 tsp oil
  • 1 tsp black mustard seeds
  • 1 tbsp sambar masala
Cook the split pigeon peas in a pressure cooker about 15 minutes with a little salt and turmeric powder (potatoes for the dosa filling can cook alongside).
Making the sambar dal
  • salt
Smooth the dal with a wooden masher or a wire whisk.
Heat oil in a pot over medium heat; add black mustard seeds and let them splutter, then curry leaves and the dal.
  • curry leaves
  • 1–2 cup water
Add about a cup or two of water so it is not too thick.
  • salt
Add sambar masala and salt before the dal boils, or it can form lumps.
  • 1 tsp tamarind concentrate
Mix in about a teaspoon of tamarind concentrate and boil about five minutes, then switch off.
