Techniques
  • 30 ml extra virgin olive oil
Heat a small fry pan over medium heat with 2 tablespoons of olive oil, then turn off the heat after a couple of minutes.
  • 2½ g hot smoked Spanish paprika
  • 1¼ g sweet smoked Spanish paprika
  • 4 g cornstarch
Whisk the hot and sweet smoked paprika and the cornstarch into the off-heat oil until there are no lumps.
Return to medium heat and add the vegetable broth slowly while whisking continuously.
  • 120 ml vegetable broth
  • 3 ml white wine vinegar
  • sea salt
Add the white wine vinegar and a dash of sea salt.
Keep whisking 2 to 3 minutes until slightly creamy, then turn off the heat and let the sauce sit.
  • 1 lb broccoli
Cut the florets off the head of broccoli, halving the bigger ones so all are a similar size.
Rinse the florets in a colander, then pat them completely dry on a dishcloth.
  • 4 cloves garlic
Roughly chop the garlic.
  • 30 ml extra virgin olive oil
Heat a large fry pan over medium heat with 2 tablespoons of olive oil, add the broccoli and toss to coat.
Saute 4 to 5 minutes, stirring about every 30 seconds.
Add the chopped garlic and stir continuously about 30 seconds until fragrant, keeping it from browning.
  • 60 ml vegetable broth
  • sea salt
  • freshly cracked black pepper
Add the quarter cup of vegetable broth, season with sea salt and black pepper, cover and lower to low medium heat.
Simmer covered 3 to 4 minutes until the broccoli is just cooked through and the broth is mostly absorbed.
  • cheese
Transfer to a serving dish and finely grate cheese over the top.
Whisk the sauce again to loosen it and spoon it over the broccoli.
