Ingredients
Method
Techniques
  • 1 lb English banger sausage meat
  • 1 tsp hot mustard
  • ¼ cup freshly chopped chives
  • ¼ tsp freshly grated nutmeg
First attempt: mix banger sausage meat with hot mustard, chopped chives and grated nutmeg.
Wrap the sausage around four soft-boiled eggs, fully ensconced and sealed shut.
  • 4 whole soft-boiled eggs
  • all-purpose flour
  • beaten egg
  • plain breadcrumbs
  • neutral flavored oil
Bread flour, then beaten egg, then plain breadcrumbs, shaking off excess, and deep fry at 375F, stirring occasionally.
  • 1 lb coarsely ground pork
  • 1 tsp freshly chopped thyme
  • 1 tbsp fresh sage
  • 1 tbsp chives
  • kosher salt
  • freshly ground black pepper
  • allspice
  • mace
  • ginger powder
  • garlic powder
  • freshly grated nutmeg
  • 1 tsp hot, dry mustard
Second attempt: mix coarsely ground pork with thyme, sage, chives, salt, pepper, a pinch each of allspice, mace, ginger powder, garlic powder and nutmeg, and a teaspoon of dry mustard.
Herbed sausage from scratch
Mix enough to build a protein network but not so much that the sausage shrinks; fry a test patty to check seasoning.
Coat three eggs with the pound of meat, smearing over any potential cracks, and rest in the fridge 30 minutes before breading.
Double bread: flour, egg, breadcrumbs, back to egg, then breadcrumbs again; use enough oil to cover the egg completely.
  • panko breadcrumbs
Final version: a single thorough coat of panko pressed into the sausage.
Fry at 350F rather than 375F until golden.
Finish in the oven alongside the waffles.
  • homemade mayo
  • grain mustard
Serve with a 50-50 mix of homemade mayo and grain mustard.
