Techniques
  • sea bass
  • oil
  • salt
Score the flesh of the sea bass fillet, lightly oil and generously salt both sides.
Soak a cedar plank in water for 30 minutes. Nail the fish to the plank with clean stainless steel nails.
Build the fire with larger wood on one side and the hot coals piling up on the other. Prop the plank against the fire pit wall or a heatproof stone nearest the coals.
When the bottom browns and bubbles, flip to cook evenly. A soft fish falls off the nails; hold it in a cradle of nails. Better suited to fish with heartier skin such as salmon or trout.
Flipping the plank fish and the result
Cook until the skin is very crisp and the flesh gently cooked.
