Ingredients
Method
Techniques
  • 4 whole rehydrated shiitake mushrooms
  • 1 bundle udon noodles
Bring a pot of water to a boil for the noodles.
  • 1 bunch gailan
  • 1 piece garlic
  • 1 piece green onion
Roughly chop the gailan, separating leaves from stalks; roughly chop the garlic; cut the green onion into bite-sized pieces; thinly slice the mushrooms, removing tough shiitake stalks.
Cook the udon for half the package time, here four minutes, stirring occasionally so they do not stick; drain and set aside.
Stir together the soy sauce, a splash of sesame oil and the hoisin sauce.
The sauce
  • 1½ tbsp soy sauce
  • sesame oil
  • 1 tbsp hoisin sauce
  • olive oil
Heat a non-stick pan over medium heat with a drizzle of olive oil; saute the gailan stalks and garlic (transcribed 'Nine-nine stalks of garlic') about a minute.
Add the green onion and mushrooms, then the noodles and sauce; saute another minute or two.
