Ingredients
Method
Techniques
  • 4½ oz shrimp
  • 1½ tsp olive oil
  • 3 cup egg noodles
  • 1½ cup bean sprouts
  • 1 cup carrot shreds
  • salt
  • 0.125 tsp black pepper
Season the shrimp with salt, black pepper and some olive oil; mix and set aside.
  • vegetable oil
Boil the egg noodles a few minutes until only halfway done and still a bit firm. Drain and toss with vegetable oil so they do not stick; cook them right before stir frying.
Heat the wok and cook the shrimp, with no added oil, on both sides until just pink, a minute or two; set aside.
Cooking the shrimp in the wok
  • 2 tbsp oil
  • grated garlic
Add about 2 tbsp oil, the bean sprouts, carrot shreds, grated garlic and the noodles; toss quickly so the oil coats everything and the noodles do not stick. Cook on medium heat a few minutes until the vegetables are done.
  • 1 bunch spring onion
  • 1 bunch cilantro
  • 1 tbsp soy sauce
  • 1 tbsp oyster sauce
Add the spring onion, cilantro, the shrimp and the soy sauce mixed with oyster sauce; stir with chopsticks, which do not cut the noodles.
Sauce, herbs and XO sauce
  • 1½ tbsp XO sauce
Add 1.5 tbsp XO sauce and mix well. Taste and adjust the saltiness; top with a little more XO sauce.
