- 1 tsp dark soy sauce
- 6 oz shrimp
- 2½ cup day old rice
- ¼ small lime lime juice
- 1 tbsp soy sauce
- ½ tbsp oyster sauce
Combine the soy sauce, oyster sauce and dark soy sauce.
The three-sauce base
- 1 tbsp oil
- carrots
- green peas
- diced onions
- minced garlic
Heat 1 tbsp oil in a big wok; add the carrots, peas, onion and garlic and stir-fry over medium-high heat 4 or 5 minutes, until a piece of carrot is done.
- 1 whole egg
Push to the side, add the beaten egg, let it set and break it up with the spatula; mix with the vegetables and push aside.
- oil
- salt
Add a little more oil, turn the heat to maximum and fry the shrimp less than a minute a side, just until pink; mix everything, salt to taste and set aside.
- 1½ tbsp oil
In the same unwashed wok heat 1.5 tbsp oil and stir-fry the day-old rice about 6 minutes, until it jumps in the wok.
Return the shrimp and vegetables, add the sauce and mix until the rice changes colour; taste and adjust with sugar or salt.
- diced scallion
- black pepper
Add diced scallion and black pepper, squeeze in lime juice and toss.
