  • oil
Put them in a pressure cooker with hot water, salt, turmeric and a drop of oil to prevent foaming; lid on, set the timer.
Let the cooker release all its pressure naturally before opening.
Simple spicing and dal consistency
Adjust the consistency: add more hot water for thinner, less water for thicker.
Make a tarka: bloom cumin seeds, fenugreek seeds and mustard seeds with dry red chilli and curry leaves in hot oil, and add to the dal.
Tarka for the dal
Variation: use only mustard seeds, only cumin seeds, panchforon (Bengali five spices), or a little asafoetida, so the dal tastes different each day.
