Ingredients
Method
Techniques
  • packaged carnitas
Brown the packaged carnitas in a pan.
Packaged carnitas
  • 2 whole eggs
With a push pin, make a hole in the fat end of each egg, where the air pocket is, using gentle pressure.
The push-pin trick
Lower the eggs gently into boiling water, dunking each a couple of times before letting it go in. Boil 6 minutes 30 seconds.
  • ramen
Add the ramen to the same water as the eggs and push it down so it is covered.
Noodles in with the eggs
  • oil
Add a little oil beside the pork and flip it; cook until golden brown and crispy.
  • baby bok choy
With about three minutes left, cut the bases off the baby bok choy so the leaves separate and add them to wilt with the noodles.
Baby bok choy
At 6 minutes 30 seconds, lift out the eggs and put them in cold water to stop the cooking.
Stopping the eggs in cold water
Put the noodles in a bowl with some of the cooking liquid and broth flavouring, and a couple shakes of Maggi.
Building the bowl
  • Maggi
  • sprouts
Add the crispy pork and sprouts. Peel the egg gently; the white should be cooked and the yolk soft, not fully set.
  • green onion
  • sriracha
Top with green onion, and sriracha if wanted.
