Techniques
  • 1 whole shallot
  • 1 whole jalapeno
  • 1 whole carrot
Chop the shallot; seed and chop the jalapeno; cut the carrot into big chunks.
  • olive oil
Heat olive oil in the pan and add all the vegetables at once; go easy on the heat so they soften without browning, until the carrots are about a third done.
Softening the vegetables
Scrape the vegetables to one side of the pan and slide the pan slightly off the burner.
Put the ground beef in the hot part of the pan, smash it flat into one pancake by hand and leave it to brown underneath; turn up the heat.
  • 454 g ground beef
Scrape up the beef once browned on the bottom; deglaze with the liquid the beef releases, keeping some chunks. Cook until no pink remains.
  • celery seed
  • mustard seeds
Add celery seed and mustard seeds and let them fry in the hot fat.
  • pepper
  • salt
  • Worcestershire
Season with pepper, a pinch of salt and a little Worcestershire, going easy.
  • ketchup
  • mustard
  • garlic powder
  • onion powder
