  • 1 lb ground chicken breast
  • 1 lb ground chicken thigh
  • 2 whole eggs
  • 1½ cup panko breadcrumbs
  • chopped curly parsley

  • cumin
  • onion powder
  • garlic powder
  • salt and pepper
Season with cumin, onion powder, garlic powder and a big pinch of salt and pepper; mix with gloved hands, breaking up the eggs first.

Form into a loaf on a sheet of parchment and set it on a rack.
Smoke at 275 on the pellet smoker for around a couple of hours.
  • 3 tbsp butter
  • ½ cup chili sauce
  • Franks
  • 3 tbsp honey

After one hour start basting with the glaze, turning the loaf, and repeat every 15 to 20 minutes; keep the extra sauce for serving.
Rest about 15 minutes before slicing.
