Trim the ribs a little and season with only salt and pepper.
Smoke on an offset over pecan wood at 200 to 225 degrees for the first three and a half to four hours.
  • apple cider vinegar
From about the two-hour mark, spray the ribs with apple cider vinegar whenever the smoker is opened to keep the outside moist.
At about three and a half hours, raise the heat to 275 degrees for pull-back on the bones and fat render.
When the colour is good, wrap in foil, spray with a little vinegar, and cook 30 to 60 minutes more until tender.
