Techniques
  • 2 parts chopped onion
  • 1 parts chopped carrot
  • chopped celery
Cut the carrots slightly smaller than the onion and celery so they cook at the same rate.
  • avocado oil
  • salt
Put the aromatics in a cold pot with a little oil and a hefty pinch of salt.
Fat and salting the aromatics
Sweat over medium-low without preheating, about five minutes, softening without browning.
  • 1 tsp dried oregano
  • thyme
Add the dried oregano and half as much thyme so they hydrate.
Adding dried herbs in pairs
  • 1 cup white wine
Add white wine to make up the liquid; turn the heat down if it sizzles. Sweat until fully soft.
Stock, broth and wine
  • 2 quart flavorful liquid
  • leftover smoked turkey
  • 1 can butter beans
Add the stock and bring to a simmer over medium-high.
  • 6 whole canned whole tomatoes
Once bubbles break the surface, add the turkey, the drained beans and about six whole tomatoes; stir to break up the tomatoes.
Lid on, heat down to maintain a simmer (about medium-low), 30 minutes.
Break up any whole tomatoes with a potato masher.
  • 1 tsp salt
Drop the heat to lowest, taste, and add about a teaspoon of salt; taste again.
  • sumac
  • Pecorino Romano
  • croutons
Serve in a wide bowl. At the table add sumac for acidity, Pecorino Romano as the finishing salt, and croutons.
