Ingredients
Method
Techniques
  • ½ tsp baking soda
  • 1 whole lemon
Stir half a teaspoon of baking soda into the juice of one lemon; let it fizz until the reaction stops and it no longer tastes sour. If still tart, add more baking soda.
Making sodium citrate at home
  • 80 ml milk or water
  • 200 g sharp cheddar
Add about 80 ml milk or water and melt in about 200 g cheese.
The sauce can boil without going gritty; thin with more liquid as needed.
