Techniques
  • 250 g onion
  • 75 g poblano pepper
  • 20 g garlic
  • 20 g cilantro
  • 5 g cumin
  • 400 g rice
Spin the onion, poblano, garlic, cilantro and cumin in a food processor 20 to 30 seconds to a small but coarse salsa-like texture.
  • 50 g olive oil
Rinse the rice, then fry it in the olive oil in a hot Dutch oven over medium heat to separate the grains.
  • 12 g salt
Add the sofrito and salt and cook down five to six minutes to soften the onions and peppers and drive off the onion water.
Add the tomato paste and fry two to three minutes to a rusty colour.
  • 30 g tomato paste
  • 550 g chicken stock
  • 225 g tomato sauce
Add the chicken stock and tomato sauce.

  • lime juice
  • 10 g chopped fresh cilantro
Finish with lime juice and chopped cilantro.
