Techniques
  • all purpose flour
  • sugar
  • salt
  • instant yeast
In the stand mixer bowl, mix all purpose flour, sugar, salt and instant yeast (active dry yeast must first be activated in the warm water).
  • warm water
  • butter
Add warm water and warm, almost fully melted butter; knead 4 or 5 minutes on medium speed until a dough forms.
Knead a few seconds on a lightly floured surface to pull it together; it should be a little tacky, not wet.
  • oil
Put in an oiled bowl, oil the top so no crust forms, cover and let rise somewhere warm until about doubled.
  • water
Deflate, knead a moment, and cut into 8 equal pieces (12 for smaller pretzels).
Rest the pieces covered on a very lightly floured surface for 10 minutes.
Roll each piece into a rope 12 to 14 inches long, or longer; twist and pinch into a pretzel shape.
  • baking soda
Add baking soda to the boiling water. Boil the pretzels about three at a time for about 45 seconds, spooning water over the tops; lift out, tap off excess water and set on a parchment-lined baking sheet.
  • 1 whole egg
  • 1 tbsp water
  • coarse kosher salt
Brush with egg wash (one egg beaten with a tablespoon of water) and top with coarse kosher salt.
Bake on the top rack at 450 for about 15 minutes.
