Ingredients
Method
Techniques
  • 25 g unsalted peanut butter
  • 40 g red onion
  • 15 g garlic
  • 2 g turmeric
  • 5 g curry powder
  • 40 g fish sauce
  • 25 g lime
  • ginger
  • 40 g brown sugar
  • 30 g neutral oil
Blend peanut butter, red onion, garlic, turmeric, curry powder, fish sauce, lime juice, grated ginger, brown sugar and neutral oil about one minute; the ginger needs the extra time to break down.
Blending the Southeast Asian aromatic marinade
  • 2 lb boneless skinless chicken thighs
By hand: grate the onion on a box grater and the garlic and ginger on a microplane, then stir everything smooth.
Sprinkle the chicken thighs with 10 grams of salt and leave about 10 minutes.
  • 10 g salt
Add four tablespoons of sauce - three for mild, five for peanut-buttery - and toss until well coated.
Refrigerate 20 to 30 minutes.
Grill on very hot oiled grates five to six minutes a side.
Variation: shrimp is his favourite non-chicken meat for this marinade.
Once grilled and rested, brush with fresh aromatic marinade to bring back the gingery edge.
Without a grill, rip the broiler to high and cook the thighs five to six minutes on both sides.
